I have a question.
Is there any reason that it should be selecting the mode for 1080i here:

You can run

tvservice -d edid.dat
edidparser edid.dat

to see why it is choosing 1080i, but the most likely reason is because the edid says that is the preferred mode.
You can add:

hdmi_group=1
hdmi_mode=16

to config.txt to override this.
