with most/any Kodi devices, AAC should be decoded to PCM and output as however many channels are contained in the stream, up to the maximum configured under the audio output settings. I just verified this on my Chromebox using the multichannel test files here: https://www2.iis.fraunhofer.de/AAC/multichannel.html -- the file is output as 7.1 PCM to my AVR over HDMI.
