Just downloaded this skin and had a question. In the TV list view on the far right, each show has the year it was released. Then a mark if it has been watched or not and finally a rating (8.8 or whatever). Is there any way to remove the rating? I went into Furniture and turned off everything I seen that said rating but maybe I missed something?

There is no way to hide the ratings by setting, sorry.

Is there a way not by settings? Can I change something in a file to remove or hide them?

In the Seasons Info view I have unwatched plots hidden but there are still images above that spoil the episode. Is there a way to hide or change those images until the episode is watched?

You mean the option to hide watched items? Thats sadly not possible with this kind of viewtype.

While watching a show there are two bars that fill. The progression bar of how much you have watched and the cache bar that's pre loading as you watch. I see where to change the color of the first bar but how do I change the color of the second bar? Currently it's pink.

There is no setting for that. Maybe in the future, but no promises.

On music screen, the cd art, artist information, clearlogo, etc disappear after 10 seconds. Is there a way to keep this information on screen?

This behaviour is related to Kodi. If the info disappears, press "i" to make the info appear. Stop the song. If you start a song now, the info should be visible all the time. That's the only thing I know about it.
