There aren't any command line options since it's mainly a GUI app.
And ViMM might not be the greatest example of Mac programming since it's build with the BASIC language using REALbasic, but if you insist you can look trough the source of the latest stable build here:

I've got the database language set on english, and XBMC set to use the TVDB scraper, that's all that it seems to need to work for me.
I would imagine that all the episodes that have matching NFO files at least should be added to your library?
Currently I don't have any episode NFO's myself, so you could try and remove them from one of your series and see if that works?
