I used to use DVD Decrypter to rip my DVDs into folders that usually consisted of VIDEO_TS folders with VOB files. This seemed to confuse XBMC. I could get XBMC to recognize the folders. XBMC would build a database with the movies and the movie art, but they wouldn't play the movies. I read somewhere else on the forum that iso files work, so I've used DVDFab to convert the folders to one .iso file. So far it's worked brilliantly. I'm posting this because I never could find an answer on the forums on exactly what to do if you had ripped your DVDs into VIDEO_TS folders. Just wanted to share what worked for me.
