It shouldn't need the nfo file to access the images. Yes in each album folder there's just an nfo file but again this is optional.
Just to try and eliminate a couple of possible issues could you confirm how you installed XBMC and what platform you're using. I know there have been problems when people install from the wizards rather than using the direct installation method. Also, if the first attempt didn't work you can go to your user data - database folder and delete the mymusic.db file and then re-scan to make sure the old stuff isn't messing it up.
