Funnily enough that option does not appear when you choose UEFI boot! Only legacy boot
I think I have worked it out, choose UEFI (USB) boot. Then use grub to edit the boot for Ubuntu and change ubuntu-server.seed to ubuntu-server-minimal.seed. Then press F10 to boot. At least I hope.
