brute force method: replace /usr/share/kodi/addons/skin.confluence/backgrounds/SKINDEFAULT.jpg

Or you might consider to copy /usr/share/kodi/addons/skin.confluence to ~/.kodi/addons and replace SKINDEFAULT.jpg there.
