[openelec] Best way to run on my Mac Mini

I am planning to install openelec on my 2011 Mac Mini. I would like to keep Mac OSX on it and prefer not to have a dualboot. Leaves me with two options: live install or installing in a virutal machine.

Was hoping that someone on this forum has gone this path and can shed some light into these two options:

1) Openelec live install on USB stick and run on my Mac Mini
* Any idea how to do and whether this is straight forward and fast?
* It appears like the easiest way, but haven't found an easy how-to-guide

2) Running openelec inside a virtual machine on my Mac Mini
* What VM would be suggested?
* How difficult is it to set it up? Any how-to-guide?
* What are pros and cons versus the live install? Should be faster given it is installed on HD rather than USB?

This is how I run xbmc on my Mac mini

I resized down the OSX partition to the 20g min size, left the rest blank
Installed ReFit bios hack so I can boot between OSX and xbmc
Download XBMcbuntu onto a USB stick, boot from it via refit
Follow the install onto the blank partition

Since moving to Ubuntu I've not looked back Infact I've now removed OSX
