Out of curiosity, is there a way to make Ember Media Manager autochoose a fanart and poster instead of waiting for the user to make the choice to proceed?

You can use the automatic scraper (Scrape Media):

But doesn't this also automatically choose the correct movie? (which isn't always correct after all?)

Well, pick the other choice then
If a match is found it get scraped, if not you get the normal selection window and after that no more questions
