I don't own one but have you tried updating the bios first? I found this nuc review from amazon...

The BIOS is months out of date out of the box, and will not recognize Linux partitions. You must update it before installing anything other than Windows. Other than that, all of the components played nicely together, and Ubuntu Desktop 13.10 worked 100% after a fresh install.
I don't know if that's the same problem you are having..that's all I could find looking around.
