I don't remember since when this is happening, but it used to go directly to the last added folder and scan the metadata on that folder, which used to take just a seconds. Now it goes through all the files, taking like 5 minutes. Any ideas?

AFAIK that is the way it always worked, to do what you want I think you have to go into file view and navigate to a new folder and use the "scan item to library" which runs the update from the indicated folder, not from the source root folder. But even a full update should be fast, if nothing has changed in the folders. I found though that I set cu-lrc lyrics addon to copy the .lrc file if found into the album folder and this was causing update to reread the entire folder. I think adding extrafanart can have the same effect.

Maybe you now have enabled a setting to add missing data/tags so it's checking for updates to existing albums/tracks.
