I see all these windows driver updates for my Intel NUC box but how do drivers for Linux distressed like OpenElc get updated?

As users we don't need to worry about good or bad driver versions and whether to update them or not. The devs track bugs, which driver versions fix them (and often push to get fixes into the drivers) or cause new issues, and update as appropriate.
