With HEVC encoded UltraHD Netflix I believe there is an intermittent resolution used as well between 1080p and 2160p - that being 2560×1440p aka 2.5K

Yep - 2560x1440 is a popular intermediate resolution as it is Quad 720p (2x1280 x 2x720) just as 3840x2160 is Quad 1080p (2x1920 x 2x1080) It's a common monitor resolution, and has featured on high-end phones/phablets.
