Is there an option that allows you to see Artist Fantart, instead of the default Visualization during playback? I feel like at one point in the past I was able to do this, but now I can't figure out how to get it back

This is more dependant on the skin you're using, the default Confluence skin has the ability to turn off Visualizations, you need to open the OSD (use the tab key in the music) and there should be a set of icons bottom right, one will turn on/off your choices. Some skins support Artist Slideshow Add-on:Artist Slideshow (wiki) and I suspect that's what you're really after.
