4K@24,25,30hz 10bit is only supported at 4:4:4 in the HDMI 2.0 specification, this is why you are getting knocked back down to 8bit.
If the Epson can't receive 4k@24hz 10bit 4:4:4 then you will have to upscale to 12bit 4:2:2, if the Epson can't take 12bit then you will need an Integral HD Fury i believe.
There is another HDMI 2.0. graph that people quote that is confusing, this is not confusing, those are the supported formats.
