Both Kodi (17.3), kernal (4.4.0-78) and NVidia drivers were also updated, tho looking at update history the NVidia drivers still seem to be a mix of 367 and 375

This is on Ubuntu 16.04 LTS

What do I need to do to the drivers?

The plain drivers ubuntu packages for you is enough. Toying arround with external drivers will produce the mess you now have :-)
