How do I get a list of the most recently played videos via python.

I doubt that such feature even exists. In theory (I've never tried this), you can fetch the list of movies or episodes via JSON-RPC, filtering them by "lastplayed" field, but not videos in general.

I looked around in the JSON RPC docs and it looks like the movies/episode "commands" refer to stuff in the user's video library.

I'm trying to catch the video url that has been sent from yatse/kore (Play on Kodi)
