I have a receiver that won't process AAC files & I seem to get a 2 channel output. Is there something I can set in Kodi to get it to pass the raw 6 channels to my receiver?

If receiver supports multichannel PCM and you connected through an interface that supports that (e.g. HDMI), then yes.
Set "Number of channels" to 5.1 in system/audio settings.

I've done that & I still only get stereo. I guess my receiver (Pioneer vsx1020) can't deal with PCM.
