I can start over from scratch with Ubuntu server, but it would be helpful to know what I can expect once it's done. Thus, my questions.

you can expect kodi autostarting on top of a bare bones window manager. You can run other GUI apps, but don't expect a decent desktop environment.

Executive summary: success!

I started from Ubuntu 18.04 server, followed Fritsch's guide, and it worked.

One question: step (2) in Fritsch's guide refers to a System -> Video -> Acceleration menu, but I can't seem to find it.

FWIW, getting HDMI audio working was tricky, as it took some time to figure out that Pulseaudio doesn't help. sudo apt remove pulseaudio pulseaudio-utils took care of that, and speaker-test --channels 2 --rate 48000 --device hw:0,3 was useful for testing my audio system.
