Using Kodi v18b4, no idea how to set content, would very much appreciate some help!

you'll be asked to set content when you're adding a new source.

I would like to set content of subdirectories within the source, rather than the source itself. However, unlike  other OS, I cannot bring up the contextual menu in Estuary to do so.

Just hold the particular TV series or the show you want to hold down and then you can do the following you asked in your question in this post.
