No different to a normal install.
Download .exe from here.
Install to your portable location.

I generally back up the whole folder first - in case something goes wrong / I want to roll back.

OK, very easy actually.

Somehow I remember one has to install Kodi to C: (as well) because of the dependencies needed or such, which have to be installed on C: to work or so. But I assume, when I install Kodi in my folder to be used portable, G:\Kodi, those dependencies are installed on C: automatically of course.

So generally there is only one installation of Kodi needed? To the folder I want it to use in portable mode, here: G:\Kodi ? And not 2 installations, one to C:, the other to anohter folder on another drive where I want it to use portable.

Yes, a backup, the folder wth the portable Kodi is 12 GB big. Do I have to back up the whole folder / content?

You don't have to back up anything.
And you don't need to install to C.

Just remember you need to have VC++ runtime (x32 or x64 as appropriate to Kodi ver) installed on the target windows system.  I don't think you can just copy dlls into the portable Kodi folder and regsvr32 them.
