Is there any way to have TMM omit completely the <original_filename> tag?    

After I finish processing a new entry for the library I create folders/rename the files in a different way so original_filename is useless to me and somewhat annoying .

well especially in your scenario that field makes sense. Just imagine you find out that you need a subtitle or something similar after renaming, with the original filename you still have the information from the filename about the release group, edition, ...

and just one more tag does not hurt anyone - to be honest: do you crawl the NFO files and check their content?
