The wiki says one can toggle this display if a real keyboard is attached by typing Ctrl-Shift-O or by using the remote app.

Where in the app would I find this function?

I am not 100% sure what this function is and don“t have access to a Kodi setup right now. But can you just try to go to the remote screen and press or long press the „i“ and the three-horizontal-lines (aka burger) button while Kodi is playing?
