I installed a bunch of Kodi's before and never seen Kodi update itself automatically.is there an option in Kodi that I can tick off so it won't update automatically again? It was 19.4 then it updated to 20.0

kodi does not update automatically, the play store will update it automatically, you need to change play store settings or install without the play stores' involvement

On Android it's the Play Store which manages updates, so it down to Play Store settings whether you automatically get updated or not. You don't mention what type of device you are using which is important, as normal Android Play Store will allow you to turn off updates on a per app basis, however on AndroidTV/GoogleTV devices there is only a universal updates on/off for all apps.
