[LINUX] Custom keyboard shortcut? Or solve 'output stereo to all speakers' issue...

Question 
First of all, I am running 10.04 Ubuntu, and 9.11 XBMC.

Is there any way to create a custom shortcut? I have this issue where I need to toggle the 'Output stereo to all speakers' in order to get sound. Some movies need it to be checked, some others don't. Is there any way for me to create a shortcut for that particular option? As it is now, when the video is playing, I need to click on the sound icon, and then toggle the checkbox with the mouse. Very annoying to put it mildly. Could this be done with a simple keyboard shortcut instead?

On a separate note however, have I done anything wrong with my XBMC setup in order to have this problem? I am a recent switcher from VLC, and I never ever had any issues with sound there.
