Would it be possible for XBMC to autodetect fonts in the /media/fonts directory? It's a real pain to go into fonts.xml and add new font sets manually.

No, that's up the the skinner.
Once the font system is rewritten (and XPR fonts die) then this may well be possible (and is, infact likely).
This won't happen till post 2.0, however.
