I'm a big fan of unraid. It is what I run. Gives good protection against a single drive failure and was pretty much designed for use as a media server.

ubuntu, e-sata port multiplier and a compact external 4 bay chassis. My htpc is also my NAS

I still use Ubuntu as well, just with shares via SAMBA. I really didn't like FreeNAS or WHS to much, but have thought about giving UnRaid a shot given how many supporters are around here
