anyone using the vdr-backend + vdr-client?

can't get the configuration (Options > Live-TV > client specific settings)

and the "new" (?) vdr-configuration addon gives me an error (can't connect via restful api)

I don't trust your kodi.old.log - it's completely different to your first log, which wouldn't be the case if it were the log of the previous shutdown, and it is in fact a later log than your second log. Also, I can see the settings are being saved in kodi.old.log, so I think this is a log of another shutdown.

You can use ssh to upload kodi.old.log: "cat /storage/.kodi/temp/kodi.old.log | paste".

2. Change a setting
3. Reboot
4. If the setting hasn't been saved, use ssh: "cat /storage/.kodi/temp/kodi.old.log | paste" (any other logs are not relevant).

Nope. Enable ssh in OpenELEC Settings addon.

Sorry for the very general question--just wondering if I should just stick with his build for a while or if this one is already caught up/ahead in terms of performance(?)

At the end and after reeboting a few times, those problems passed, altough I've encountred a new problem with the IPTV Simple Client.
After installing an addon and setting up the client, everything worked great, but after rebooting everything erased again. The only solution I found is to enter the configuration of the IPTV and updating to the lastest version (which is already installed).
I need to repeat this proccess after rebooting everytime in order to use the "television" menu.

I see your GUI settings being saved in that log, so if IPTV didn't save it's settings they're being saved separately. There's a number of addon errors in your log that may be preventing a clean shutdown - I'd recommend starting with a fresh .kodi without any downloaded add-ons (use the IPTV current installed in the build) and see if you still have a problem with IPTV.
