What would be the best way to copy an installation setup from one pc to the other? Maybe install xbmc on both using the same version, configure one and copy the xbmc folder to the other pc?

I want to make sure i brings over plugin configuration, skin etc..

you should be bale to just copy the xbmc userdata folder to the new pc.

If you bring up the run dialogue and type %appdata% you will find a directory called XBMC. Copy this entire directory to the new pc and save it as %appdata%\xbmc

make sure your sources are exactly the same on all your systems.
copy the contents of this folder
