I am using Dharma XBMC for my HTPC and I am having a problem with the xbmc scrapers messing up my shows (i.e. changing the names of the shows, changing the names of episodes so they are all out of whack). I wanted to know if there was any way to update my library without xbmc going and re-scraping all the shows( I already have them scraped using ember).

You're either using an out of date version of Ember (or possibly a to-new version of Ember that doesn't like Dharma) or you have your settings wrong in scraping.

If XBMC sees .nfo files that it can read, it will read them in preference to scraping. The debug log will tell you what's going wrong.
