I do not have Plex installed. When I updated through the NitoTV app on my aTV2 running ios 5.1.1 (apple TV software 5.0.2), and did a soft reboot as instructed on the Wiki, it still shows in NitoTV & XBMC as Eden 11

you used the wrong repo - betas and release candidates sit in their own pre-release repo - see

So, it can't be done from NitoTV, is that correct?

It can be done from NitoTV once you add the pre-release repo via the command line. NitoTV is basically just a GUI for those commands, and it needs to know where to look for the newer version.
