I'm doing a modified confluence skin and want to change a some text in the Services Settings but can't find out what xml file to change. I know that SettingsCategory.xml is the file that controls the layout but want to change the text and or remove some sections that I don't want in there. Any help would be great.

Not possible, the lists are filled by Kodi internally.
