How often do all addons get updated or removed on Kodi?I'm only new to Kodi so any advice would be appreciated.

If you have installed from a repo, then add-ons get updated when the author pushes a new version to their repo (or the official repo if installed from there). If you just installed directly from a zip then the add-on will never update unless you do so manually.
Removal is quite rare, more often an author just stops support, and the add-on gets either taken over by someone else (either directly or by a fork) or is just left orphaned and unsupported.
