Been using LIVE forever and decided to take the plunge and do a full install of Ubuntu on my Acer Revo 1600. What is the best way to copy my settings over from the LIVE version which i have on my SD Card to the new install on Ubuntu?

Just backup your home directory, all the settings are stored there. Bear in mind you won't gain anything if your machine is a 100% media centre though, if anything it will be slower. If you don't want the GUI desktop environment I'd stick with Live.
