I have spent hours installing all of these different sources and addons to my xbmc and apple tv 2. How can I back it up so I wont have to go through all this again when I have to restore and jailbreak again?

Copy your userdata folder and your add-on folders from your atv to your pc.
(This will also copy over all your library thumbnails and info.)
Also makes it easy to set up multiple atvs if you want them all the same.
I use WinScp to do this.

Thanks for the help. Do I get WinScp for the computer or the aTV? Where is the userdata folder and add-on folders located?
Also, I have a MAC, not windows. So is WinScp just an client transfer agent like Cyber duck?

For the computer.
Winscp is for windows, but I believe cyberduck does the same for mac.
Look in private/var/mobile/library/preferences/xbmc and you will see the add-ons folder and the userdata folder.
Just copy those to your pc and you can copy them back to the atv at any time.
