I haven't used live tv in awhile... Where you able to change it just like a normal view elsewhere in the skin? It is for the channel view when entering the live TV section, right? I have not removed anything in the live TV section so I just need to figure out what used to happen so I can hopefully add that back in.

You might be able to add back the original view select button in includes.xml on line 125 and make it visible only in the live tv section but I have no way to test to see if that would work or if it will break the current way views are changed in the skin

I have started to add those xmls but have not been happy with my results. I have tried 3 different incarnations and I just can't (so far) nail a look I am happy with. The second question is (I agree) a little more complicated I will not add that functionality to the skin for everyone. However I will try to help you mod it in to your version. Unfortunately starting that will not be possible till early next week. I will look into helping you add it if that is still something you are interested in but to be clear I will not add extrafanart built in to the skin until there is better support for it in the core of Kodi or Artwork Downloaded adds certain things to help aid its accessibility.
