You could reduce the menu to just icons, but it takes some editing of the xml. I have done this before but I found some issues here and there so changed back and edited The spacing and color of the icons selected.

I think i can answer 1 and 2 for you:
1. in the skin settings/configure short cuts there is an option to edit menu shortcuts. There you can create your own menu entries and you can also tell what widgets you  want to show up there.
2. for pictures to show up in landscape you either have to have a landscape image for that movie or tv series, or you need to have fanart and a clearlogo, which Kodi will them combine in a landscape pic for you.

Search just works for me. Do you use your own library or do you use addons only? I believe the search function only works on your local library, but i might be wrong about this.

For my issue n.2 I changed to poster which doesn't have that overlay.

For the search I would need to have it search through an addon. But that guy in the youtube video set it up so that it pulls stuff from addon to the local library (through Trakt and OpenMeta) and that's where all the playlists on the homepage come from. Which brings me to point 5.
If anybody could point out through a quick tutorial of how to set this one up it'd be awesome!

So yeah the guy in the video me used Library integration I didn't use the open meta addon but I would in the future. Really its not that hard to do cant really do a tutorial because of the questionable addons most people use to setup their library. However if you google search kodi addon library integration you will find several tutorials on how to do it. 
Once you get your Library set up then you will want to use Tags and or Smart Playlists or Smart Playlists made from Tags lol that's what I did anyway.

Hey Cscott thanks! At the moment I set up the whole Bingie Skin with OpenMeta, OpenInfo and Trakt - still not integrating with local library.
Which is really pretty awesome but I reckon the main advantage of integrating an addon with the library would be that titles and trailers load faster?
Or is there any other advantage with that setup?

Yeah man the widgets load in a couple seconds as oppose to painfully watching them load for 30 seconds or more and some of my widget literally have 100 plus items in them. The trailers always take about 20 seconds to load unless you pull from your own local trailers. That is too much work to do in my personal opinion. I turned off the automatic trailers except for the in the home widget. If I want to watch the trailer I play it manually from the info dialog screen. Honestly the automatic trailers annoy me so much that I turned them off in Netflix as well. I have Bingie set up so close to Netflix that I get confused on which one I'm using sometimes.

Gotcha! Would that mean though that stuff synced in this way to your local library would occupy actual physical space on your hard disk, SD, raspberry or whatever device you use?
