I am hoping someone has already tried using 2tb flash drives for video/music storage with kodi and can give there opinions. I am in the process of physically downsizing my whole house server size and was considering swapping out my 4 2tb hdd for 4 2tb flash drives and was curious what kind of performance issues I might expect.

That would be a rather costly purchase. I'd suggest 2x 4tb or 1x 8tb would be a cheaper alternative while still taking up less space.

i considered changing to 1 large drive but the system will be running from battery so I am trying to keep the power usage as low as possible as this will be going in our new off-grid house.

A hard drives uses about 7 watts. A 2TB flash drive will cost you over $1000 each. You could probably change your HTPC, modem, router, etc... to make up the difference.
Asus Chromebox = ~12watts
Raspberry Pi 2 = ~2watts

Traditional 2TB 2,5" laptop drives could be solution, some of those take less power than 2TB SSD's.
