The only editor LibreELEC has is the nano text editor that can be accessed from the Linux command line, as in via a remote SSH session connected from a different computer.

LibreELEC also ships vi (the busybox version) - otherwise I'd be completely lost :-)
Edit: and you can also get vim via the system tools addon
