Hmm, this sounds like a unicode bug in the backup function. Would it be possible for you to send me your kodi.log file after the error was displayed ?
Unicode issue = one or more of your paths contain special characters like é or ë etc.

Kodi will only show any locations in the file pickers that were added to the file manager.
Just open the Kodi File Manager (it's in the submenu of settings) and add some sources on your disk.
