If you want to check for that file and set it's permissons correctly (755) - it should show up after a reboot. If it is not in the /usr/bin folder - you can find it in the .kodi/addons/script.module.zap2xml/bin folder and copy it over.
I'm trying to figure out what is going on with the installation for ubuntu - but I haven't sorted it yet.
Following a reboot there was no copy of tv_grab_zap2xml found within /usr/bin, therefore I copied one into /usr/bin and set its permissions to be 755.
Although your Wrapper still does not appear within TVheadend's List of Internal Grabbers.
Looking at the tv_find_grabber script contained within the xlmtv-utils Ubuntu Package (which TVheadend 4.2.3-20~g407c8a3 appears to be calling to generate its epggrab/config), it seems to be scanning Grabbers for Perl XLMTV::Capabilities/Options to determine each Grabber's capabilities.
This might limit its usefulness for non-Perl Based Grabbers?
