Would be hard with the older builds because of different res's. On the older builds I had setup a simple batch file to clone the library then launch XBMC. The issue with it was that to get library updates on the other pc's I had to close and reopen XBMC. Also, things got messy if I scanned some content on one of the computers that I didn't normally scan from.
I do what you suggested exactly with the newest SVN builds, installed on NAS and starting in windowed mode then I just use the hotkey to switch to fullscreen. Working well for me. Don't forget if you do this and keep the profiles stored in the install folder you'll need to run XBMC in admin mode. Now I just use my batch file to backup the entire profile directory to local computer at each XBMC start. I hosed up my library once and had to completely delete and rescan, I never want to have to do that again unless something changes in development and I am forced to do so.
Cheers
