Without changing the source-code, there is currently no method available to reassign the buttons.
You could probably use a generic "android as keyboard"-solution (like this one: http://remotedroid.net/) and then use one of the available buttons for the subtilte delay (configured via keyboard.xml - the actions you are looking for a "SubtitleDelayMinus" and "SubtitleDelayPlus" )
