Just curious. Any advice on what software would I use to generate these nfo files? (my music is all self ripped over the years but I never kept logs)

sorry, I don't know of any. Maybe TMM ( https://www.tinymediamanager.org/features/ ) supports this.
I never required such feature, that's why I haven't looked into it.
