I could not find a definitive answer: if I get access to an internet radio stream in XBMC, can I share it over UPnP to a media player?

You mean if you add for example a shoutcast stream as source?
I am fairly certain it won't be exposed as a proper uPnP audioBroadcast if that is what you wanted, however that would be a rather nice addition and a valid feature request.
