Definitively if you will use your nuc only for xbmc, openelec is the best candidate on an USB stick or on a ssd (that I made). A small 30 go is largely enough and 2go ram as well.
I can use my Yamaha receiver remote to drive it. Don't forget to follow the turn around about displays and ir sensor explained page 1 of the thread.
And if you watch 24hz movies don't forget to cancel the default 175 ms delay in openelec. Usually it's not usefull anymore with modern nuc and av receiver. I lost a lot of time until I found that : http://openelec.tv/forum/68-audio/57509-24p-audio-delay
