The NUC IR receiver is able to work with pretty much any remote. I've tried a host of remote controls that I had and most of them do work (Samsung remotes I had did not work though). Of course you do need to find out the scan codes and do the keymapping. In my experience an MCE remote will work out of the box, though key mapping might be necessary in order to customize the behaviour of the remote to your liking.
Have a look at http://wiki.openelec.tv/index.php?title=...own_remote in order to use almost any remote with the NUC IR receiver, if you're using OpenELEC/Linux.
Keep in mind though, that if you want to power on the NUC from sleep/poweroff state, you need to be able to send an MCE power command (scancode 0x800ff40c) regardless of the OS.
