I used this script a year ago when setting up a dual boot OpenELEC/Chrome OS setup.

I went to switch over and update to LibreELEC 8.0 beta.

To do this, do I need to run the script as if the Chromebox was out of box?

there is one upgrade issue that applies universally to both types of setups is the size of the system (1st) partition. Much older OE installations only required 256MB for the system partition, but newer OE/LE versions require ~500MB. If you initially set your system up when the smaller partition size was used, you'll need to backup your userdata and do a fresh install so that the system partition is recreated with the correct size. In the case that you try to upgrade and your system partition isn't large enough, the upgrade process with simply inform you of that and not attempt the upgrade

The 8.0 version download being added to the update folder did not work. It does say that this is the update to be used when updating from LibreELEC 7.0 so I supposed I need to get this version first?

EDIT: Did not work either. Maybe I'll just do a fresh install
