Remote desktop options with Kodi (no desktop)

Hi, all. I'm a long time Kodi user. I run Kodi on an Ubuntu 14.04.4 box in its own session (so there's no desktop). I'd like to be able to see and interact with the Kodi interface occasionally (usually to check it's working and that new files have been detected, or just to provide remote assistance to my family who can't find something..)

If I was running a full desktop I'd use VNC with whatever is provided in the Ubuntu desktop. But I don't want to do that. I know Kodi has a web interface but it's not quite enough sometimes.

I already have a VPN to reach the machine so forget about remote networking.

What's the best way to see and interact with Kodi's actual screen when I can't see the screen? (Wow, this question is harder to word than I thought!)
